Bella’s Overnight Raspberry Chia Seed Pudding
1 cup Raspberries (fresh or frozen)
1 tbsp Honey
1 tbsp Lemon Juice
⅓ cup Chia Seeds
1 cup Coconut Milk (or milk of choice)
½ tsp Vanilla Extract

Add raspberries, lemon juice, and honey to a nonstick saucepan. Cook over medium heat, stirring until the consistency meets your expectations. Remove from heat and set aside.

Combine chia seeds, coconut milk, and vanilla extract in a small bowl. Pour into 2 glass jars and top with raspberry sauce.

Seal each jar with a lid and give them a good shake! Chill overnight, or at least 4 hours.
