Simple Avocado Toast Recipe

Simple avocado toast is a delicious, healthy breakfast that is easy to make. Combine fresh lime juice and cilantro with ripe avocado to make this easy breakfast recipe – the perfect weekday morning breakfast that takes only a few minutes to make. If you haven’t tried avocado toast yet, this just might become your new favorite breakfast!

Avocado toast is really easy to make! Start with your favorite bread. I like to use a gluten-free multigrain bread (Udi’s is my favorite), but any bread that you like will work.

While the bread is toasting, slice a ripe avocado in half, scooping it out into a small bowl or ramekin. Mash the avocado with a fork or spoon, and add some fresh lime juice and chopped cilantro.

Mix in a little flaky sea salt and black pepper, and spread on the slice of toast. Easy as that!

How to choose a ripe avocado

When shopping for avocados, it’s important to know how to tell if an avocado is ripe, and when you’re planning on using it. The easiest way to tell if an avocado is ripe is by its color. An avocado that isn’t fully ripe yet will appear bright green in color – while an avocado that is ripe and ready to use will look much darker and almost black. The firmness of an avocado will also give you a clue to its ripeness. The ripe ones will be much softer, and easier to cut into!

I usually find that the avocados at my grocery store aren’t fully ripe when I purchase them. So I know from experience now that if I’m planning on making avocado toast, I need to pick them up ahead of time to give them a few days to ripen. I’ll let them ripen on the kitchen counter, and then move them to the fridge so that they don’t go bad before I use them.

What goes well on avocado toast?

Avocado toast is endlessly customizable! Experiment with adding different toppings to make it your own. Here are just a few ideas to get you started:

  • fried egg
  • organic baby arugula, spinach, or kale
  • halved cherry tomatoes
  • alfalfa sprouts
  • bacon or veggie bacon
  • red pepper flakes
  • Everything Bagel Seasoning
  • a drizzle of olive oil

 1 slice multigrain bread
 ½ avocado, roughly chopped
 ¼ fresh lime, juiced
 1 tbsp cilantro leaves, chopped or torn
 2 pinches sea salt flakes
 black pepper, to taste
 red pepper flakes, to taste (optional)

Toast the slice of bread until it's nice and toasty. Set aside.

In a small bowl, mash the avocado and add cilantro, lime juice, salt and pepper. Stir to combine.

Spread the toast with the avocado mixture and top with additional cilantro and red pepper flakes, if desired.

Recipe Notes:
  • Make sure your avocado is ripe! If it's not fully ripe, it will be hard to mash up. A ripe avocado will have a deep, dark green color and be slightly softer than one that isn't ripe yet.
  • Add your favorite toppings to make this recipe your own! Try adding a fried egg, or some Everything Bagel seasoning!
  • You can easily double this recipe. Just toast a couple slices of bread and use the whole avocado. Click on Serving at the top of this recipe card to automatically adjust the ingredient amounts!
